BEER MAKING KITS - EXTRACT & YEAST
These extract kits include yeast, hopped extract & instructions. The instructions offer a simple way to make beer; but, not the best way. Please disregard the instructions & do at least a 10 minute boil with 1 ½ gallons water, the malt & corn sugar. It is wise to replace the yeast since shelf life at room temperature is questionable & most yeast included in the kits is generic.
Most malt kits will need the addition of 2 - 3 pounds of corn sugar.We recommend dry malt instead for a full-bodied beer. Honey can also be added to these kits with good results. Adding ½ pound of crystal & aroma hops at the end or the boil will greatly improve these kits.

The sugar in malt is maltose. It is 75 - 85% fermentable & besides increasing the alcohol in your beer, it will also increase the body & head retention. To calculate syrup into dry malt equivalent, multiply weight by .8. For example: a 3.3 lb. can of malt extract syrup times .8 = 2.64 lbs. dry malt extract.

DRIED MALT EXTRACT - all 3 pound bags
Dried malt is extract syrup with the water removed & is about 15% more concentrated. 1 pound of dry malt is about 2 ½ cups; this makes using amounts less than a full can easier to measure & store. You pay only for malt, not water in malt extract syrup. To calculate dry malt into syrup equivalent, multiply weight by 1.25. For example: a 3 lb. bag of dry malt times 1.25 = 3.75 lbs. malt extract syrup.

Grains are in 1 lb. bags except for Klages, Malted Barley, Maris Otter & Pale that also come in 10 lb. bags. Lovibond is the system for rating malt by its darkening ability, a higher lovibond rating will give you darker beer, while a lower rating means a lighter beer. 2-row grains are more uniform in size than the 6-row, thus yielding a more consistent cracking. To steep grains to add flavor to an extract recipe, add 1 quart water for each pound of grain; heat to 150 degrees. Pour through a strainer; then pour the liquid through the grains a second time. Use the liquid collected as part of your boil with additional water, your malt, hops, etc. Please call or email if you need a full sack of grain or would like a 10 lb. bag of a certain variety.
We will crack grains for our customers; for up to 5 pounds - it is free of charge. For over 5 pounds there is $ .25 a pound charge for cracking.

Adjuncts can be a useful addition to the recipes of any brewer, though many breweries choose to get all their fermentables from malt, using only enough sugar to carbonate their beer after fermentation. If using adjuncts as part of a recipe, make sure to use at least a 3 to 1 ratio (malt to adjunct).

Liquid Ale Yeast
1028 - London (British): Complex, woody, tart, strong mineral notes, slight diacetyl. Flocculation - medium; attenuation 73 - 77 %. Fermentation temperature 60 - 72 degree F.
1056 - American (Chico): Ferments dry, finishes smooth, clean, well balanced. Cleanest, but mutation-prone, Sierra Nevada's yeast. Best all-round yeast, use for just about anything. Flocculation - low to medium; attenuation 73 - 77 %. Fermentation temperature 60 - 72 degree F.
1084 - Irish: Slight diacetyl & fruitiness, clean, malty, full bodied, least attenuative of the Wyeasts. Best in stout or scotch ale. Flocculation - medium; attenuation 71 - 75 %. Fermentation temperature 62 - 72 degree F.
1098 - British (Whitbread): Ferments dry & crisp, slightly tart but well balanced. Great in pale ale, bitter & porter. Flocculation - medium; attenuation 73 - 75 %. Fermentation temperature 64 - 72 degree F.
1187 - Ringwood: Unique fermentation & flavor characteristics produce malty, complex profile that clears well; diacetyl rest recommended after fermentation. Flocculation - high; attenuation 68 - 72%. Fermentation temperature 64 - 75 degree F.
1214 - Belgian Abbey: Banana estery flavor with clove-like phenolics & alcohol spice, this is no ordinary yeast. Tartness often develops over time. Ferment warm or with inadequate aeration & you're likely to get a bubblegum-like note. Good for abbey beer & strong ales. Flocculation - medium; attenuation is 71 - 75 %. Fermentation temperature 58 - 68 degree F.
1338 - European: From Wissenschaftliche in Munich. Full bodied, complex strain, clean & malty, good for Alt Beer. Flocculation - high; attenuation 67 - 71 %. Fermentation temperature 60 - 72 degree F.
1388 - Belgian Strong Ale: Robust flavor with moderate to high alcohol tolerance, fruity nose & palate, dry, tart finish. Flocculation - low; attenuation 73 - 77 %. Fermentation temperature 58 - 68 degree F.
1728 - Scottish: Rich, smoky, peaty character ideally suited for Scottish style ale, smoked & higher gravity beer. Flocculation - high; attenuation 69 - 73 %. Fermentation temperature 55 - 70 degree F.
1762 - Belgian Abbey ll: High gravity Belgian yeast with a distinct solventy flavor from ethanol production, slightly fruity, dry finish. Flocculation - medium; attenuation 73 - 77 %. Fermentation temperature 65 - 75 degree F.
1968 - Special London Ale: Rich malty character & balanced fruitiness, high floculation makes this excellent for cask conditioned ale. Note the slightly higher fermentation temperature. Flocculation - high; attenuation 67 - 71 %. Fermentation temperature 64 - 74 degree F.
3056 - Bavarian Wheat: 50/50 blend of S. cerevisiae & delbueckii bacteria for southern German style wheat with cloying sweetness when beer is fresh. Often produces relatively unattenuated beer, without clove-like aroma or flavor. Flocculation - medium; attenuation 73 - 77 %. Fermentation temperature 64 - 70 degree F.
3068 - Welhenstephan Wheat: Saccharomyces delbruckii single strain culture for German Wheat beer. This is the better, "truer" weissen yeast, initial reports are very positive. Flocculation - low; attenuation 70 - 74 %. Fermentation temperature 64 - 70 degree F.
3278- Belgian Lambic: Lambic style yeast with rich earthly, odoriferous character & acid finish. Suitable for gueuze, fruit beers & Faro. Can be used in conjunction with a sour mash or lactic fermentation. Flocculation - low to medium; attenuation tends to be variable. Fermentation temperature 65 - 75 degree F.
3787 - Belgian Trappist: Robust top cropping yeast with phenolic character, alcohol tolerance to 12 %, ideal for Biere de Garde, ferments dry with rich ester profile & malty palate. Flocculation - medium; attenuation 75 - 80 %. Fermentation temperature 64 - 78 degree F.
3944 - Belgian Witbier: A tart, slightly phenolic character capable of producing distinctive witbier & Grand Cru style, is alcohol tolerant. Flocculation - medium; attenuation 72 - 76 %. Fermentation temperature 60 - 75 degree F.
Liquid Lager Yeast
2007 - Pilsen (St. Louis): For pilsner style beer; ferments dry, crisp, clean & light, may have slight apple like flavor. Used in steam beer with good results. Flocculation - medium; attenuation 71 - 75 %. Fermentation temperature 48 - 56 degree F.
2042 - Danish: Rich, yet crisp, dry, accents hop characteristics. Flocculation - low; attenuation 73 - 77 %. Fermentation temperature 46 - 56 degree F.
2112 - California: Ferments to 65 degree F keeping lager characteristics. Malty profile; clears brilliantly. Allegedly, Anchor steam yeast. Flocculation - high; attenuation 67 - 71 %. Fermentation temperature 58 - 68 degree F.
2124 - Bohemian: Clean, rich residual maltiness in high gravity pilsners. Allegedly, one of four Pilsner Urquell yeast. Flocculation - medium; attenuation 69 - 73 %. Fermentation temperature 46 - 54 degree F.
2206 - Bavarian: Lager strain used by many German breweries. Rich flavor, full bodied, malty & clean. Good for bock. Sometimes reported to be a slow starter. Flocculation - medium; attenuation 73 - 77 %. Fermentation temperature 48 - 58 degree F.
2565 - Kolsch Yeast: Hybrid: ale & lager character, this strain develops excellent maltiness with subdued fruitiness, crisp finish, ferments well at moderate temperatures. Flocculation - low; apparent 73 - 77 %. Fermentation temperature 56 - 64 degree F.
2278 - Czech Pils: Classic dry finish with rich maltiness, good choice for pilsner & bock beer, sulfur produced during fermentation dissipates with conditioning. Flocculation - medium high; apparent attenuation 70 - 74 %. Fermentation temperature 46 - 54 degree F.
2308 - Munich (German): From Wissenschaftliche in Munich. Sometimes unstable, but, smooth, soft, well rounded, full bodied, it is reported to be complex, prone to diacetyl, & more likely to bring out hop flavor than # 2206. Good for bock & heavier beer. Floccualtion - medium; attenuation 73 - 77 %. Fermentation temperature 48 - 56 degree F.

Hops are used in brewing: as preservative, for bitterness, flavor & aroma. Bitterness
of hops is determined by the alpha rating & length of the boil. The higher the
alpha percent is, the more bittering power the hops has. Be sure to check the Alpha
Rating (%) when calculating the amount of hops you will need. The alpha given below
is approximate, check with us for current alpha; the alpha shown is the average
alpha acid for each variety of hop.

It is a good idea to make a yeast starter for your wine yeast to insure a good healthy start.
For Yeast Starter - Mix together:

A full case consists of all the same malt extracts, no mixed cases allowed for this discount. Malt extract kits of the same variety can also be bought by the case to save money. Extract kits are packed 6 cans per case except for the 7 pound kits that are normally packed 2 cans per case.
